Grilled Chicken with Rice and Greens

This recipe makes an easy but complete meal, Grilled Chicken with Rice and Greens.

INGREDIENTS:
2 tablespoons lemon zest
1 tablespoon grated ginger
2 garlic cloves, grated
1/8 teaspoon crushed read pepper flakes
4 boneless, skinless chicken breasts
2 cups jasmine rice
1 ½ cups water
1 cup canned unsweetened coconut milk
1 teaspoon kosher salt
1 ½ pound kale, stems and leaves coarsely chopped
3 tablespoons olive oil
½ cup vegetable stock
Salt and pepper
2 tablespoons red wine vinegar
DIRECTIONS:
- In a small bowl, mix together the lemon zest, ginger, garlic and red pepper flakes. Rub onto the chicken breast and set aside. Heat grill to medium high heat and grill chicken until juices run clear, about 15 minutes.
- In the meantime, rinse and drain rice in cold water. Place in a medium saucepan. Add the water, coconut milk and salt. Bring to a boil over high heat. Stir and reduce heat to low and cover. Continue cooking for 15 minutes. Remove from the heat and let stand 10 minutes, covered. Fluff with a fork and serve.
- While rice is cooking, heat the olive oil in a large saucepan over medium high heat. Add the garlic and cook until soft but not browned. Raise the heat to high and add the stock and kale. Cover and cook for 5 minutes. Remove the lid and continue to cook until all the liquid has evaporated, stirring constantly. Season with salt and pepper. Stir in the vinegar.

INGREDIENTS:
6 cups chopped romaine lettuce
6 ounces thinly sliced smoked salmon
2 tablespoons thawed frozen corn
½ medium tomato, chopped
3 tablespoons extra virgin olive oil
2 tablespoons white wine vinegar
1 tablespoon minced fresh basil
1 garlic clove, minced
1 teaspoon fresh minced chives
1/8 teaspoon kosher salt
¼ teaspoon freshly ground black pepper
DIRECTIONS:
- Place lettuce, corn, and tomato in a large bowl.
- In a small bowl, whisk together the oil, vinegar, basil, garlic, chives, salt and pepper.
- Toss the vinaigrette with the salad. Place salmon on top and serve.
Meatloaf Sandwich

INGREDIENTS:
1 ½ pound ground round
¼ cup finely chopped onion
¼ cup finely chopped green pepper
1 cup bread crumbs
½ cup tomato sauce
2 eggs, slightly beaten
1 teaspoon kosher salt
¼ teaspoon ground pepper
¼ cup chili sauce
Good quality sliced bakery bread (any variety)
Romaine lettuce
Mustard and mayo
DIRECTIONS:
- Preheat the oven to 350 degrees.
- Combine meat, onion, green pepper, bread crumbs, tomato sauce, egg, salt and pepper in a large bowl.
- Form meat mixture into patties (6) and place on a rimmed baking sheet. Place in a preheated oven and bake for 15 minutes. Spread the chili sauce on top and bake for an additional 10 minutes. Remove from oven and let rest 10 minutes before serving.
- To serve: on good quality bakery bread (any variety) slather mayonnaise on one slice and mustard on the other. Place Romaine lettuce and meatloaf in the center of the two slices.

INGREDIENTS:
1 pound ground beef
1 egg
2 tablespoons parsley, chopped
3 cloves garlic, minced
½ cup breadcrumbs
½ cup grated parmesan cheese
1 teaspoon salt
2 tablespoons olive oil
1 tablespoon minced garlic
1 (30 ounce) can tomato puree
2 tablespoons fresh basil, chopped
1 tablespoon fresh parsley, chopped
¼ teaspoon red pepper flakes
1 tablespoon sugar
Salt to taste
1 pound thick spaghetti noodles
DIRECTIONS:
- Preheat oven to 400 degrees.
- In a medium bowl mix together the beef, egg, parsley, 3 cloves garlic, breadcrumbs, parmesan cheese and 1 teaspoon salt just until blended. Form into 1 inch balls and place on a rimmed sheet pan. Bake in a preheated oven for 15 minutes.
- In the meantime, in a large saucepan heat the oil and sauté the garlic just until golden. Add the tomato puree, basil, parsley, red pepper flakes, sugar and salt. Simmer. When the meatballs are done add to the sauce and simmer for 30 minutes.
- Bring a large pot of salted water to a boil. Cook pasta according to package directions. Serve with sauce and meatballs.
