As you might have seen before, I have a deep love for low-carb mousse recipes, such as this chocolate mousse. They are a delicious way to end the day as they are sweet, light, fluffy and so easy to prepare!

This delicious keto cheesecake fluff brings me so much excitement, as I do love cream cheeses and other low-carb desserts.

If you have a sweet tooth like me, you might find the keto diet slightly perplexing, especially with the diet it offers. This is why I truly appreciate recipes that do not compromise your diet.

This is a delicious cheesecake mousse that has the promise of not having the extra calories and sugars. Overall, it is a much healthier version of the dessert.

The mousse does not have a crust, which is typically the heavy part of the dessert. This means you can enjoy melted butter and almond flour free only indulging in light airy deliciousness.

Bonus: The dessert is great for those who want to stay on the keto diet, as it is also gluten free. So it is the perfect dessert for those who like indulging.

What I like most is how fast it is to put together this low-carb dessert.

How To Make This Easy Keto Cheesecake Fluff

This is the simplest keto dessert recipe with cream cheese that you’ve made.

Let me share some essential tips and walk you through some of the steps in the process of making the keto fluff that I know will assist you a great deal.

Step 1: Whip softened cream cheese

The first step in this recipe is to take a block of cream cheese and add it to the mixer bowl.

To soften the cheese, I put it in the microwave for about 30 seconds and then stir it up with a fork. Starting with softened cream cheese is very important otherwise you risk ending up with lumpy cream cheese.

Step 2: Add sweeteners and extracts

Now, this is the right time to put in the sweeteners and the flavor extracts. A mix of erythritol, stevia and stevia extract powder works really well for me. But feel free to use the keto sweetener(s) of your choice.

Adding sweetener is a personal process and in this case you can adjust to your liking. The recipe requires around ½ to ¾ of a sugar replacement sweetener.

As for the extracts, my go-tos are lemon and vanilla. However, you can also use different extracts or even lemon juice to change the flavor and that would work as well!

Step 3: Mix in whipped cream for a light keto fluff

The sweetened cream cheese mix is perfect on its own and doesn’t need the whipped cream.

If you are going for the light airy look you will want to fold the cream in first to prevent too much deflation. After that, the whole blend gets whipped with a hand mixer.

No, it is not like folding a shirt. This is folding with purpose and in a methodical way!  

To include the whipped cream into the cream cheese use a spatula to scoop the cream cheese from the edges and gently place it over the bowl’s center.

To fold is to mix, but in a much soft and in a gentler way. You are still combining cream cheese and whipped cream but doing it slowly.

Step 4: Serve and chill

The next step is to place the mixture in the fridge for the remainder of the work to let the flavors blend together. While the ideal time to chill the dish is around two hours you also have the option of making it the night before.

After the mousse has set in the refrigerator you can either pipe or spoon it into serving dishes but it is much easier to wait until it is fully set to serve it. Personally, I prefer to fully chill the mousse before serving it.  
For easy serving a spoon can be used however to elevate the presentation a piping bag is recommended.

What To Serve With Keto Cheesecake Fluff

It can be delicious as i, but you can elevate the dish to a strawberry cheesecake parfait by adding sweet cinnamon almond meal sprinkles to imitate graham cracker crumbs and a drizzle of strawberry sauce.

Want to garnish the sugar free cheesecake keto mousse? You could sprinkle chocolate shavings but if you are like me you’d prefer a drizzle of sugar-free blueberry syrup.

Endless possibilities:

To make it easier, I topped the portions with sugar-free chocolate chips. Another option would be doubling the mousse recipe to create a no bake cheesecake.

How To Store Keto Cheesecake Mousse

Like with other low-carb cream cheese desserts this one needs refrigeration. Storing it in an airtight container in the fridge is best. It will remain fresh for about 4-5 days

Yes, a stand mixer will be just as effective as an electric hand mixer. You will achieve the same results as described in this post with the stand mixer.

Can I freeze a low-carb dessert with cream cheese?

Yes, low-carb desserts with cream cheese can be frozen, but the creamy texture will be altered. Instead of light and fluffy it will turn into a hard block reminiscent of solid ice cream. As it thaws, the frozen dessert will soften and be easier to eat but it will not be fluffy. Just a heads up!

How do I make a keto cheesecake mousse with chocolate?

To keto cheesecake mousses you can use unsweetened cocoa powder or sugar-free chocolate chips or drizzle them with melted sugar-free chocolate

Another option would be to blend with sugar free chocolate pudding mix for a simpler option (Just use half the amount the recipe calls for). Alternatively, you can use chocolate extract instead of vanilla extract.

Ingredients

  • 7 ounces cream cheese softened

  • ⅛ teaspoon stevia concentrated powder optional

  • ⅓ cup powdered erythritol

  • ¼ teaspoon lemon extra

  • 1 ½ teaspoons vanilla extract

  • 1 cup heavy whipping cream

Directions

  • In a large bowl, beat the cream cheese until smooth and creamy.
  • Add erythritol, stevia, vanilla extract and lemon extract. Mix until everything is well blended.
  • In a separate bowl whip the heavy cream until stiff peaks form.
  • Gently fold half of the whipped cream into the cream cheese mixture. Once combined fold in the remaining whipped cream.
  • Beat the entire mixture on high speed until light, fluffy and airy.
  • Cover and refrigerate for at least 2 hours.
  • Spoon or pipe into individual serving cups. Top with fresh berries or sugar-free chocolate if desired.
