Ingredients
2 pounds ground beef
½ teaspoon onion powder
2 cloves large garlic
6 eggs see note
1 pound no sugar bacon cooked and chopped
1 can tomato paste 6 ounces
¼ teaspoon ground pepper
½ teaspoon salt
12 ounces grated cheddar cheese divided
1 cup heavy cream
Directions
- Cook the chopped bacon in a cast-iron skillet over medium heat until crispy. Drain the grease and set the bacon aside.
- In the same skillet, brown the ground beef over medium high heat. Season with garlic powder and onion powder.
- Once the beef is fully cooked drain any excess grease and spread the beef evenly across the bottom of the skillet.
- Add the cooked bacon back in and stir to combine with the beef.
- In a mixing bowl whisk together the eggs, tomato paste, heavy cream, salt and pepper until smooth.
- Stir in 8 ounces of grated cheese into the egg mixture.
- Pour the egg and cheese mixture over the beef and bacon in the skillet.
- Sprinkle the remaining 4 ounces of grated cheese on top.
- Bake in a preheated oven at 350°F (175°C) for 30–35 minutes, or until the top is golden brown and set.
