Ingredients and Substitutions

Milk: I prefer a blend of 2% Fairlife milk and unsweetened almond milk. While the almond milk keeps calories lower, 2% Fairlife milk adds some fat that makes the ice cream rich and creamy.

Protein powder: I used PAYcience vanilla protein powder. You can change it to any protein you prefer. If a dairy-free version is needed, you can change it to a dairy-free and plant-based version.

Sugar-free instant pudding mix: I used vanilla flavor, but you could use white chocolate or cheesecake too. It helps to add flavor and also acts as a thickening agent.

Liquid stevia: can also sub for honey or pure maple syrup.

Optional Variations and Dietary

Mix-ins!  This recipe is where mix in and toppings shine! Add your favorite cookies, cookie dough, sprinkles, chocolate chips, candy bites, peanut butter, granola, etc.

Make it chocolate!  Use chocolate Fairlife milk, chocolate protein powder and chocolate sugar-free pudding mix to make the best chocolate protein ice cream.

Make it vegan! Use your favorite dairy-free milk, vegan protein powder and vegan pudding mix to make it vegan.

How To Make

  1. Let me walk you through the process so you know what to expect when you’re making it!
  2. Add all the base ingredients to an empty Ninja Creami pint.
  3. Combine with an immersion blender (or use a food processor or blender)
  4. Freeze the mixture for 12 to 24 hours.
  5. Take out and run under warm water for a few minutes. Then spin through the Gelato cycle once while warm.
  6. Give the top of the ice cream a quick stir then spin once more on Lite ice cream cycle.
  7. You can top it off with whatever you like! Enjoy! (Topping Ideas: Chocolate Sauce, Sprinkles, Crushed Oreos/Reese’s)

How to Store

In case of not finishing the pint, you can save it for later. Simply, smooth the top layer of the ice-cream with a spoon so the top is leveled in the Ninja Creami container and pop it back in the freezer. When it comes to eating it, you will have to re-spin the pint until the desired consistency is achieved.

In case you prefer saving the ice-cream in a different container, scoop the remaining ice-cream in a different container and pop it in the freezer. To enjoy, place it in the container for a while to thaw or microwave for 5-10 seconds to soften.

Ninja Creami Ice Cream Maker Tips

1. Don’t forget to prep in advance! For example, making this ice-cream 8 hours in advance is enough.

2. To avoid icy edges, run the container of the ice-cream under hot water for 30 seconds or room temperature for 15-20. After the first spin, run a butter knife or spoon along the sides and re-spin.

3. Re-spins. If you wish, you can re-spin the ice cream 2-3 times if you wish to soften the ice cream, which will be the same as soft serve. This will add to the soft serve experience. If you want a more scoop-able ice cream, then 1 re-spin would be the best choice.

4. Do not fill the container to the brim. It is advisable to not worry if the ice cream pint looks partially empty. Due to the re-spin process, the ice cream is bound to expand. Giving the ice cream the necessary space will ensure the optimal spinning and the best, creamiest ice cream can be achieved.

FAQs

Why is the powdery texture on the Ninja Creami ice cream after the first spin?

The ice cream base is supposed to be powdery and crumbly after the first spin, so there is nothing to worry about. With a little more liquid on the second spin, the ice cream will be as desired. If the ice cream is not at the desired texture after the first re-spin, you can re-spin 2-3 more times.
